Ingredients:

1 x 9" unbaked pie shell
3 x Eggs
1 cup Light corn syrup
1/4 cup Sugar
1/8 tsp Salt
2 tbl Butter, softened
2 tsp Vanilla
1 cup Spanish peanuts, chopped
Instructions:
Instructions: Heat oven to 375 . In large bowl, combine eggs, corn syrup, sugar, salt, butter & vanilla. Blend well at medium speed. Stir in peanuts & coconut.

Pour into unbaked pie shell. Bake at 375 for 35-45min or til crust is golden. Cool thoroughly for several hours. Serve w/ whipped cream or vanilla ice cream, if desired.
