Preparation time is approximately 15 minutes Place stock, peas, lettuce, shallots, sugar, rosemary, peel and the leaves from half the mint into a saucepan, bring to the boil, cover and simmer for 5 minutes. Remove rosemary and lemon peel. Puree soup in a blender until smooth. Reheat soup. Serve garnished with reserved mint sprigs, yoghurt and pepper. Variation: Can also be served chilled.
