Ingredients:
Amount Ingredient
1 slc Lemon peel only about 1cm x 4cm
1 pch freshly ground Pepper to taste
6 x outside Lettuce leaves washed & shredded
1/2 cup sliced Shallots
8 sprg Mint
1 sprg Rosemary
1 tsp Sugar
4 cup Chicken Stock
500 gm Frozen Peas
Instructions:
Instructions: Contains approximately 6 portions
Preparation time is approximately 15 minutes

Place stock, peas, lettuce, shallots, sugar, rosemary, peel and the leaves from half the mint into a saucepan, bring to the boil, cover and simmer for 5 minutes.

Remove rosemary and lemon peel. Puree soup in a blender until smooth. Reheat soup. Serve garnished with reserved mint sprigs, yoghurt and pepper. Variation: Can also be served chilled.

NOTES : A fast, easy, delicious high-fibre soup.
