Ingredients:
Amount Ingredient
4 x Ears of fresh corn, cut
----------------- kernels off the cob -or ----------------
2 cup Corn kernels
2 x Ripe peaches, chopped
3 slc Fresh ginger
1 sm Yellow onion, chopped
1 x Red bell pepper, chopped
1 x Dry red chili
1/2 cup Champagne vinegar
3 tbl Light brown sugar
1/2 cup Zante currants
1 x Cinnamon stick
Instructions:
Instructions: GENERAL INSTRUCTIONS: Combine all ingredients in a stainless steel pot.

Bring to a boil uncovered. Then lower to a simmer and cover for for the remaining

Cooking Time: about 1 hour. The mixture should be thick like a good finished jam or marmalade.

SPECIAL NOTES: combine all but the schnapps together and cook as usual. Add the peach schnapps after youve taken the chutney off the heat.
