1 can peaches (15 oz.) drained and diced
1/4 cup green onions diced
1 tbl lemon juice
1 x bell pepper any color, diced
2 tsp mint leaves chopped
1 can diced green chiles (7 oz)
Instructions:
Instructions: Mix well and refrigerate for 24 hours. As a holiday gift, use both red and green bell peppers. This salsa freezes well.

Makes 2&1/2 cups.
