1/4 cup margarine melted
1/2 cup brown sugar packed firm
29 oz peach slices in light syrup drained
3 med eggs
1 cup sugar
1/2 cup peach juice
1 tsp vanilla
1/2 cup flour
1 tsp baking powder
Instructions:
Instructions: Put melted margarine in a 9" x 13" pan. Sprinkle brown sugar in pan and place paeches evenly around over brown sugar & margarine.

Mix eggs, sugar, peachjuice, vanilla, flour, baking powder, & salt. Pour over
peaches and bake at 350 degrees for about 35 minutes.

I havent
made it in awhile but it is simple and delicious. It is meant to be served with Cool Whip - my choice would be the lite one or try pouring fat free half & half over it.

I sometimes save fruit juice from fruit cocktail or peaches and freeze it to
use later because this recipe without the oleo, brown sugar, & fruit make a
really easy shortcake for with strawberries or whatever. Prepared that way it is virtually fat free! [Lola]
