Instructions: If the peaches dont peel easily treat them like tomatoes: cover with boiling water leave for 30 seconds drain and skin.
Discard the stones and process the flesh with about 1/2 of the sugar syrup and the orange juice. Taste and add more syrup as needed. Leave to cool completely chill in the fridge then freeze. Serves 6 Here the underlying scent of cinnamon enhances the peaches wlthout a overwhelming them. I use a scented syrup made with one cinnamon stick. For a more emphatic lick of cinnamon use two sticks This sorbet and the following one form a good blueprint for other fruit sorbets.
