Instructions: Pre-heat oven to 350F/190C degrees.
Butter a baking dish. Peel 2 peaches. Cut flesh in pieces. Cut remaining peaches in half. Remove pits and scoop out a bit of the pulp from each half. Combine pulp with cutup peach and mash well with a fork. Add butter and crushed macaroons, coconut, egg yolk, cream and brandy and mix well. Fill each peach half with mixture, mounding it slightly. Arrange in baking dish and bake 30 minutes. Serve hot or cold. Macaroons are crisp coconut biscuits available from supermarket. Email this Recipe:
