Instructions: Whisk cornstarch with lemon juice; set aside. Spray a non-stick skillet with cooking spray and heat over high heat. Sprinkle both sides of chicken breasts with paprika and lemon pepper. Brown quickly on both sides, about 3 to 5 minutes. Meanwhile, combine ginger, basil, nutmeg, parsley, chicken broth and peach juice. Add to chicken, cover and reduce heat to medium-low. Turn chicken over once during cooking. Add peach slices.
Cover and cook until chicken is done, approximately 8 to 10 minutes. Increase heat to high, push chicken and peaches to one side. Whisk in cornstarch/lemon juice mixture into pan juices and stir until thickened. Email this Recipe:
