Instructions: Mix cake mix with water, vegetable oil and eggs. Beat in large bowl on low speed for 2 minutes or stir by hand for 3 minutes. Spray bottom of 9x13-inch pan with cooking spray. Pour cake mix into pan. Drain peaches and save the juice. Arrange peach slices over cake batter in rows. Mix the cream cheese, 1 cup sugar, peach juice and vanilla. Spread on top of the peaches carefully. Mix 2 tablespoons sugar and the cinnamon. Sprinkle on top of cake. Bake at 350 degrees for 60 minutes. Cool and refrigerate. Serve with whipped topping.
Makes 12-15 servings. When I played on a tennis team in Canton, Ohio, we served this many times to the opposing team, when they visited our club, and this dessert was always a big hit and everyone asked for the recipe. Email this Recipe:
