Instructions: Place the Peaches in a bowl pour over boiling water count to 10 then remove and drain.
Using a sharp knife nick the skin of the Peaches then peel. Place the wine sugar and lavender in a wide saucepan and bring to the boil slowly stirring until the sugar dissolver. Boil vigorously for 5 minutes taking care that the mixture does not bubble over. Using a slotted spoon remove and discard the lavender. Add the peaches remove from the heat and cover. Allow the peaches to cool in the liquid. To serve ladle a peach or two into a bowl along with the boozy juices top with ice cream and a few lavender flowers. Serves 4 Email this Recipe:
