2 x red onions, cut into eighths
2 sm yellow squash, cut in 1/2 inch strips
2 sm zucchini, cut in 1/2 inch strips
1 x red, yellow and green bell pepper, cut in 1/2 inch strips
4 x cloves garlic, sliced thin
2 tbl minced fresh parsley
1 tbl balsamic vinegar
1 tbl olive oil
1/2 tsp dried oregano or
1/2 tsp fresh
1/4 tsp salt
Instructions:
Instructions: Place onions, squash, zucchini, bell peppers and garlic in a bowl and toss well. Combine parsley, vinegar, oil, oregano, salt and pepper in a lidded jar and shake well. Pour over vegetables and toss.

Spoon into a greased, 9-by-13 inch baking pan. Bake at 425 degrees for 20 minutes, stirring every 5 minutes. Serve warm or at room temperature.
