Instructions: Place onions, squash, zucchini, bell peppers and garlic in a bowl and toss well. Combine parsley, vinegar, oil, oregano, salt and pepper in a lidded jar and shake well. Pour over vegetables and toss.
Spoon into a greased, 9-by-13 inch baking pan. Bake at 425 degrees for 20 minutes, stirring every 5 minutes. Serve warm or at room temperature. Email this Recipe:
