Instructions: Set oven at 375F. For topping, in a bowl, stir together 1/2 c brown sugar & 1/2 c flour. Cut in 1/4 c peanut butter & 3 tb butter till crumbly, set aside.
In a bowl, stir together 2 c flour, 1 c brown sugar, baking powder & soda, and salt. Add milk, 1/2 c peanut butter, eggs and 1/4 c butter. Beat w/ electric mixer on low till blended. Beat at high speed for 3 minutes, scraping sides of bowl frequently. Pour batter into a greased 13 x 9 x 2" baking pan, spreading evenly. Sprinkle w/ topping mixture. Bake at 375F for about 30 minutes or till a toothpick inserted near the center comes out clean. Serve warm or cool. Variation: Chocolate Peanut Butter Coffee Cake. Prepare as above, except add 1/4 c miniature semisweet chocolate pieces to topping and stir 1/2 c mini semisweet chocolate pieces into batter after beating. Email this Recipe:
