Because it is cheap, widely available, and has a relatively high smoke point (it doesnt begin to burn until 410 F (210 C), it is often called for in recipes where food is fried. But it can be used as broadly as any other general-purpose oil. The thing is, peanut oil has something of a peanutty taste, and where a lot of people are delighted to use walnut oil or olive oil for dressing a salad, peanut oil isnt as popular.
