1 x 6-oz package Louis Kemp Crab Delights
1 lb spaghetti (12 to 16 oz)
1/2 cup snow peas (optional) sliced lengthwise
1/2 tbl sesame seeds toasted
2 tbl chopped fresh cilantro or double
1/2 lrg carrot cut in tiny matchsticks
4 x green onions thinly sliced
----------------- Dressing: ----------------
(Asian-style peanut dressing may be sustituted)
1/2 cup chunky peanut butter
1/3 cup white vinegar
1/2 tsp sugar
3 tbl soy sauce
2 tbl water
1 tbl toasted sesame oil
1/2 tsp finely minced garlic
Instructions:
Instructions: Prepare pasta according to package directions. Drain pasta and rinse in cold water. Place snow peas in a microwave container, loosely cover with plastic wrap and microwave on high for 1/2-1 minutes. Combine ingredients that make the dressing. Whisk until smooth. Add pasta, crab and all other ingredients. Toss together and serve.

NOTES : NOTES : REVIEW: Versatile recipe that invites variations. We halved the recipe and had salad leftover (wrapped salad appetizer). Our Modifications focused on lower carbs and more CRUNCH. Salad: 4 oz Udon rice noodles (Eden); snow peas; finely shredded carrot and celery. Added radish, waterchestnuts and purple cabbage. Dressing - plain just Jiff; less sugar; mirin vinegar and a splash of Ume vinegar. We "aged" the salad for 60-minutes before serving. RESULTS - After adding all the sharp crunchy vegetables, the dressing could use more kick: recommend adding more aromatic sesame oil; skip the sugar, and add chopped honey coated peanuts. Variations: try with chicken or mixed seafood. Would be good with tofu. - kitpath@earthlink.net 2001/07/16
