2 cup all-purpose flour
3/4 cup sugar
2 tsp baking soda
1/2 tsp salt
1/4 tbl ground cardamom
OR
1 tsp ground cinnamon
2 x eggs beaten
1/2 cup cooking oil
2 tbl milk
1 tsp ginger, fresh grated
2 med pears peeled, cored, and finely chopped (about 1 1/2 cups)
3/4 cup walnuts chopped
Instructions:
Instructions: 1. Lightly grease eighteen 2 1/2" muffin cups or line with paper bake cups; set aside.

2. In a large mixing bowl combine flour, sugar, baking soda, salt and cardamom or cinnamon. Make a well in the center of flour mixture.

3. Combine eggs, oil, milk and ginger; add all at once to flour mixture. Stir just until moistened (batter will be thick).

4. Fold in pears, walnuts and raisins. Fill each prepared muffin cup 3/4 full. Bake in 350 oven for 20 to 25 minutes or until a wooden pick inserted in center comes out clean. Cool 5 minutes. Remove from cups; serve warm.
