2 x eggs lightly beaten
2 cup unfiltered organic apple juice
1/4 cup canola oil
1/2 cup turbinado sugar
1/2 cup raw millet
1 tbl ground cinnamon
1/2 tsp ground nutmeg
2 med pears finely chopped
1/3 cup whole wheat pastry flour
Instructions:
Instructions: Preheat oven to 375F. Measure everything and proceed. In a large bowl, mix together the eggs, juice, oil and sugar. Stir in the millet, spices and pears. Gently stir in the flour and baking powder. Stir just until combined; batter should be fairly thick. Fill greased muffin tins 3/4 full. Bake for 15-17 minutes. Let muffins cool slightly, then remove from tins and place on a rack.
