16 open-faced wedges
Ingredients:
Amount Ingredient
Vegetable oil, for greasing pan
2 x (10 inch) flour tortillas
1 x ripe pear, peeled, cored and cut into 16 lengthwise slices
About 6 ounces cold Brie, cut into 1/8- to 1/4 inch lengthwise slices
1/4 cup finely chopped red onion
1/2 x to 1 teaspoon minced serrano chili, see cooks notes

Instructions: Cooks notes: Wear gloves. Use caution when working with fresh chilies. Wash hands and work surface thoroughly upon completion and do NOT touch your face or eyes.

Preheat oven to 450 degrees. Generously grease large jellyroll pan.

Place tortillas on prepared pan. Arrange pear wedges like the spokes of a wheel, radiating from the center. Arrange Brie slices between the pear slices.

Sprinkle on onion, chili and salt.

Bake 3-5 minutes, or until edges of tortilla are browned and cheese is melted. Remove from oven and let sit 3-5 minutes.

Cut each tortilla into 8 wedges.

Yields 16 open-faced wedges
