450 gm dessert pears peeled cored and sliced
50 gm soft light brown sugar
1/2 tsp ground ginger
2 x piece preserved stem ginger thinly sliced

100 gm self raising flour
1 tsp ground ginger
50 gm caster sugar
50 gm shredded suet
1 x egg
Instructions:
Instructions: Arrange the pear slices in a 1 litre ovenproof dish.

Mix together the sugar and the ground and sliced ginger and sprinkle over the fruit.

To make the sponge sift together the flour and ground ginger and stir in the sugar and suet.

Beat in the egg and milk and beat the mixture until it is smooth.

Spoon over the fruit and level the top.

Bake in a preheated oven (200c/400f/gas6) for 25 minutes until the sponge is firm but springy to the touch. Serve hot with cream or custard.
