2/3 cup sugar (caster)
2/3 cup water
825 gm pear halves
1/4 cup lemon juice
Instructions:
Instructions: Combine sugar and water in a pan, stir over heat until sugar has dissolved. Bring to the boil, cool then refrigerate until cold.

Blend or process pears until smooth, add lemon juice, rum and sugar syrup. Pour mixture into a tray or lamington tin and freeze for 3-4 hours. Whisk mixture regularly while freezing to ensure a smooth texture. The more often you do, the better the finished result will be.

Serve with fresh or poached pears and berry coulis.
