Ingredients:

1 cup sugar (caster)
1 cup water
1 cup red wine
6 x cloves
1 x cinnamon stick
1 tsp ginger, crushed
1 tbl lemon juice
Instructions:
Instructions: In a large saucepan bring sugar, water, burgundy, cloves, cinnamon, ginger, lemon to the boil. Simmer 5 minutes.

Peel the pears and place in liquid, cover with a teatowel to keep submeged. Simmer very gently for about 25 minutes until pears are soft but not broken. Test with a wooden or metal skewer. Gently lift pears out and refigerate.

Reduce cooking liquid until syrupy, remove from heat, pour over pears. Cover and chill.

Serve cold with whipped cream.
