Yield:
8 to 12 servings
Ingredients:
Amount Ingredient
1 clv garlic, halved
1 sm head romain, torn
1 head escarole or bibb lettuce, torn
3 med tomatoes
1 med cucumber, sliced
1 med green pepper, cut into
thin rings
1 sm onion, thinly sliced and
separated into rings
1 cup crumbled feta cheese
1/2 cup pitted ripe olives
1 cup snipped parsley
Greek Dressing (recipe follows)

1/2 cup olive oil
1/4 cup red wine vinegar
1/4 tsp dried oregano, crushed
Instructions:
Instructions: Rub wooden salad bowl with cut clove of garlic. Discard garlic. Combine torn greens in bowl. Cut tomatoes into wedges. Add tomato, cucumber, green pepper and onion rings. Top with feat cheese, olives and parsley. Cover and chill. Just before serving pour Greek Dressing over salad to coat vegetables.

Makes 8 to 12 servings.

Greek Dressing:
Combine all ingredients in a screw-top jar. Cover and shake to mix well. Chill thoroughly. Shake again just before serving.
