Instructions: Prepare cookie dough: Combine butter with sugars in large bowl of electric mixer. Beat at medium speed, scraping bowl frequently, until creamy (about 2 minutes). Add egg, orange peel and juice. Beat until well mixed, about 1-2 minutes.
In separate bowl, combine flour, soda and salt; stir to combine. Add to butter mixture and beat on low speed until well combined, 1-2 minutes. Stir in coconut, pecans and carrots with large wooden spoon or rubber spatula. Drop by rounded tablespoonfuls, 2 inches apart, on ungreased baking sheets. Bake in preheated oven 10-12 minutes or until light, golden brown. Remove from oven and transfer with thin spatula to cooking rack. Cool completely. Prepare frosting: Combine powdered sugar and freshly grated orange peel. Beat in enough orange juice until mixture is spreading consistency. Use to frost tops of cooled cookies. Email this Recipe:
