6 x skinless boneless chicken breast halves
3 tbl sesame oil
3 tbl vegetable oil
2 tbl minced shallots
1 tsp grated lemon zest
1 tbl lemon juice
1 tbl soy sauce
1 tbl hot water
1 cup crushed crisp wheat crackers - (such as Stoned Wheat Thins)
1/2 cup grated Asiago cheese
1/4 cup chopped fresh basil
2 tbl chopped fresh Italian parsley
1/2 tsp fresh cracked black pepper
1/2 cup toasted pecan pieces
Instructions:
Instructions: 1. Wash and pat dry the chicken breasts. Place them in a shallow nonreactive pan. Combine sesame oil, vegetable oil, shallots, lemon zest, lemon juice, soy sauce, and hot water and pour over chicken breasts. Set aside in the refrigerator to marinate for 30 minutes or up to 2 hours.

2. Preheat the oven to 450 degrees .

3. In the bowl of a food processor, combine the crackers, Asiago cheese, basil, parsley, pepper, and pecans and process to crumbs.

4. Remove the chicken breasts from the marinade and discard the marinade.

Coat both sides of the chicken breasts with the pecan crumbs.

5. Place on a buttered baking sheet, drizzle with the melted butter and roast for 25 minutes, until chicken is crisp and browned and cooked through.
