1 cup flour, plain
80 gm butter
1 x eggs
1/3 cup sugar (caster)
1/2 tsp vanilla essence

2 x eggs
1 cup golden syrup
30 gm butter
1 tsp vanilla essence
Instructions:
Instructions: Prepare pastry:
Sift flour into a bowl and gradually rub in butter until mixture resembles breadcrumbs. Whisk egg, sugar and vanilla together and gradually work into mixture to form a smooth dough. Knead gently until incorporated. Wrap in plastic and allow to rest in refrigerator for 30 minutes.

Roll pastry out to fit a 20cm flan ring or pie dish.

Bake "blind" in a moderate oven for 10-15 minutes until pastry is firm.

Prepare filling:
Beat eggs lightly and gradually pour in golden syrup in a thin stream, beating constantly until combined. Melt butter and stir into mixture with vanilla. Fold in pecan nuts.

To finish:
Pour filling carefully into prepared pastry base and bake in a moderate oven for 35-40 minutes or until filling is firm.

Serve warm or cool with whipped cream.
