Instructions: In a large cooking pot or saucepan, heat the oil. Add the brown sugar and stir until it has almost caramelized, about 30 seconds. Add the chicken with a little water and simmer until the meat is half cooked, about 5 minutes. Stir in the rice, peas, coconut milk, salt, pepper, garlic, parsley and onion.
Stir and season to taste. Simmer on low heat for 20 minutes or until everything is cooked and moist (but not soggy). Garnish with chives and serve hot with stews and roasts. Start to Finish Time: "0:01" Note: Original recipe called for 4 tbsp. oil, 1/2 cup coconut milk, and any kind of chicken. You may be able to use less oil.
