Amount Ingredient
1 lb Fresh Spinach -- washed
1/2 tbl Extra Virgin Olive Oil
2 med Onions -- coarsely chopped
3 x Anchovy Fillets coarsely chopped
1/2 cup Chicken Stock
Salt and Pepper
1 lb Penne Pasta -- cooked
Can Substitute Ziti, Bows, or Any Other
Instructions:
Instructions: Boil the spinach in a pot of boiling water 1 minute. Drain and let cool.

Thoroughly squeeze out liquid. In the meantime, heat the oils in a large skillet. Saute the onions until they begin to brown. Add the anchovies and cook a minute or so. Add the spinach, stock, and season to taste. Cover and simmer 10 minutes. Drain the pasta and toss in the sauce.
