Instructions: In a pyrex measuring cup, heat the broth in a microwave. Add the tomatoes, "splash," oil, vinegar, and garlic. Set aside.
Cook the pasta in a large pot of salted water until almost done. Add the garbanzo beans and finish cooking. Drain. Transfer the pasta and beans to a serving bowl. Add the tomato mixture and toss. Add the chopped spinach and toss. Adjust the salt and pepper if needed. Sprinkle the top with Parmesan; do not stir. Chill for 20 to 40 minutes. Serve 2 as main dish, 4 as side dish. TIP - Trader Joes Splash is a combination of sundried tomatoes, dried onions and other vegetables. McCormick and Schilling make similar product. Serving Ideas : Pepper Chicken Monterey (see recipe); canned pears NOTES : light meals For a peppery bite, substitute arugula for the spinach.
