Instructions: Season both rib strips with salt and pepper. Preheat oven to 375 degrees. In a large skillet saute onion in butter until wilted. Mix into onion: apple, bread cubes and seasonings. Add 1/4 cup apple juice to moisten the bread cubes. Place 1 strip of ribs on a rack in a roasting pan. Arrange bread mixture over ribs. Cover with second strip of ribs; fasten with toothpicks or skewers. Cover and bake 1 hour.
Add remaining apple juice to pan and mix with the drippings, generously baste ribs; recover and bake an additional 30 minutes (continue to baste ribs during this period). Reduce oven temperature to 300 degrees. Uncover and baste well return to oven for 15 minutes, uncovered. Remove from oven, place on platter, remove toothpicks/skewers and carve into 6 pieces.
