1 x Young black bear haunch all fat removed,
and wiped dry
Salt to taste
Freshly-ground black pepper to taste
Butter as needed
Mild mustard as needed
Instructions:
Instructions: Dust well with salt and pepper, brush with melted butter. Spread with mild, prepared mustard, and coat with flour. Roast slowly at 300 degrees, uncovered, for about 4 hours.
