Instructions: Halve the capsicum, discard the seeds and slice thinly.
Slice onions. Dice tomatoes. Heat the oil in a pan, add the onion and fry without colour for 3 minutes until soft. Add the garlic and peppers, cover and cook gently for 5 minutes, stirring occasionally. Add the tomatoes and salt and pepper and cook a furtur 5 minutes, stirring gently. Leave to cool.
