8 oz macaroni
1 tbl olive oil
1 lrg onion finely chopped
3 x cloves garlic minced
2 x red peppers sliced
2 x yellow peppers sliced
1 x green pepper sliced
1/4 cup flour
3 cup lowfat 1% milk
1 cup feta cheese crumbled
2 tbl fresh dill chopped
1 tbl dijon mustard
salt to taste
1 dsh cayenne pepper
1 dsh ground nutmeg
non stick cooking spray
Instructions:
Instructions: 1. In a large pot, bring 4 quarts lightly salted water to a rolling boil.

Cook the macaroni about 8 minutes, until al dente. Drain, rinse to cool and drain again.

2.Preheat oven to 400 degrees.

3. Meanwhile, in a large frying pan heat olive oil; add onion, garlic and peppers and cook over medium heat for about 4 minutes or until vegetables are soft but not brown.

4. Stir in flour and cook 1 minute more; stir in milk and bring to a boil, stirring steadily.

5. Simmer about 1 minute until thickened, stir in cheese, dill, mustard, salt, black pepper,
cayenne and nutmeg to taste.

6. Stir macaroni into sauce and then spoon into a lightly greased 8X12 casserole dish.

7. Sprinkle top with toasted bread crumbs and bake 30-40 minutes or until bubbly and golden brown.

NOTES : Some times I just crave Macaroni and Cheese.. and I love casseroles ! This one sounds good.
