Ingredients:

2 lb boneless beef bottom round roast cut 1" chunks
8 cup water
2 lrg onions diced
3 x beef bouillon cubes
1 tsp freshly-ground black pepper
2 x tomatoes diced
1 lrg green bell pepper diced
2 x potatoes peeled, diced
2 x carrots peeled, sliced thin
Instructions:
Instructions: Place the beef chunks, water, onions, bouillon cubes, and black pepper in a soup pot. Cover and bring to a boil over high heat. Reduce the heat to low and simmer for 1 hour, or until the beef is tender.

Stir in the remaining ingredients and simmer, partially covered, for an additional 45 to 50 minutes, or until the vegetables are tender.

This recipe yields 6 servings.
