Ingredients:
Amount Ingredient
FOR THE PUREE ----------------
500 gm Parsnips, peeled and diced (1lb)
15 gm Butter, (1/2oz)
Salt and white pepper
----------------- FOR THE MUSTARD FRUITS ----------------
3 x Plums, peeled and diced
1 x Pear, peeled and diced
1 x Apple, peeled and diced
50 gm Caster sugar, (2oz)
3 tbl Water
25 gm White mustard seeds, crushed (1oz)
Instructions:
Instructions: Put the parsnips into a pan and cover with water. Bring to the boil and cook until soft.

Drain off the water, puree the parsnips with the butter and seasoning. Keep warm.

Meanwhile, put all the fruits into a saucepan with the sugar, water and mustard seeds.

Heat until the fruit softens and the sugar solution reduces by half.

Serve the ham on top of the parsnip puree with the mustard fruits as a glaze.

NOTES : A warming meal idea combining smooth parsnip puree with piquant peppered ham and spicy mustard fruits.
