2 tbl olive oil
2 x red bell peppers cored, and diced
or thinly sliced
2 x yellow bell peppers cored, and diced
or thinly sliced
4 whl tomatoes chopped
(or 1 16-oz can tomatoes, chopped, drained)
1 x onion chopped
2 x garlic cloves - (to 3) chopped
2 oz chopped fresh basil divided in half
1 oz chopped fresh rosemary
1 oz chopped fresh thyme
1 lb penne cooked
Instructions:
Instructions: In a large saute pan, heat the oil and saute the peppers, tomatoes, onion, garlic, half the basil, the rosemary, and thyme. Cook until the vegetables are tender.

Pour this mixture over the pasta and toss to combine well. Sprinkle the finished dish with the remaining basil and Parmesan cheese.

This recipe yields 4 servings.
