Ingredients:

500 gm Fresh puff pastry, (1lb)
1 x 120 gram tub fresh pesto sauce
50 gm Sundried tomatoes, roughly chopped (2oz)
125 gm Mozzarella cheese, sliced (4oz)
6 x Black olives, quartered
Freshly ground black pepper
Instructions:
Instructions: Roll out the pastry large enough to cut out 4 x 15cm (6 inch) circles.

Place in the refrigerator to chill for 30 minutes.

Place the puff pastry circles on a baking tray and spread over the pesto sauce.

Arrange the remaining ingredients on each tartlet and place in a preheated oven 200 C/400 F/Gas Mark 6 for 15 minutes until well risen and golden brown.

Garnish with fresh basil leaves to serve.

NOTES : Delicious pastries with sundried tomatoes & mozzarella, ideal for picnics or parties, served cold, or warm with salad for a supper dish.
