Instructions: Roll out the pastry large enough to cut out 4 x 15cm (6 inch) circles.
Place in the refrigerator to chill for 30 minutes. Place the puff pastry circles on a baking tray and spread over the pesto sauce. Arrange the remaining ingredients on each tartlet and place in a preheated oven 200 C/400 F/Gas Mark 6 for 15 minutes until well risen and golden brown. Garnish with fresh basil leaves to serve. NOTES : Delicious pastries with sundried tomatoes & mozzarella, ideal for picnics or parties, served cold, or warm with salad for a supper dish. Email this Recipe:
