2 lb raw shrimp, peeled and deveined
2 med onions, sliced
1 x 14 oz. can artichoke hearts, drained
1 x 5 oz. jar pimento stuffed green olives, drained
1 x -1/2 Cups vegetable oil
1 x Garlic clove, crushed
1 cup white vinegar
3 tbl sugar
2 tsp salt
1 x -1/2 Teaspoon celery seed
1/4 cup capers, with liquid
Instructions:
Instructions: Boil shrimp 3 minutes or until pink. Drain and chill. Combine shrimp, onions, artichokes, and olives (in medium glass container).

Mix oil, vinegar, sugar, salt, celery seed, garlic and capers; pour over shrimp mixture. Cover and refrigerate 6 hours or overnight, stirring occasionally. Serve over lettuce.

Serves 8 to 10
