1 cup pearl barley, rinsed
8 x to 10 ounces fresh green beans or 1 (10-ounce) package frozen cut green
beans, thawed
2 med carrots, thinly sliced
1/4 cup minced fresh dill
Instructions:
Instructions: In a saucepan, bring 3 cups water to a rapid simmer; stir in the barley.

Cover and simmer gently until the water is absorbed, about 35 minutes. Remove from the heat and set aside, uncovered, until barley reaches room temperature.

Meanwhile, if using fresh green beans, trim them and cut in half.

Steam or microwave the fresh or frozen green beans until done to your liking.

In either case, make sure the green beans are still bright green. Rinse them under cool water.

Combine the cooled barley and green beans with the remaining ingredients in a serving bowl and toss well. Serve immediately or cover and refrigerate until needed.

Variation: Substitute prepared tabbouleh for the barley.
