Instructions: Heat oil in a medium saucepan over medium-high heat. Add onion and garlic. Saute until soft, about 5 minutes. Add rice and nuts, stir until golden brown. Add broth and lemon juice, bring to a boil. Reduce heat, cover and simmer until liquid is absorbed, 20 to 25 minutes. Just before serving, add mint, lemon rind and pepper. Fluff with two forks.
