Instructions: Coat a deep fry pan or wok with olive oil. Saute chicken until it is about 50%
cooked. Add the vegetables and cook for about 10 minutes over medium, heat, stirring occasionally. Add salt and pepper to taste. Mix the pineapple, sweetener, and chili sauce, thicken it as indicated, and add it all to the chicken. Put it all into a large casserole dish, having been sprayed with vegetable or olive oil spray, and bake at 325 degrees F. for about 40 minutes. Meanwhile, steam enough rice to serve 6 people. The person who submitted this recipe uses Uncle Bens converted long-grain rice, steamed. There is a multiplicity of choices regarding rice, and ones favorite type will be fine in this dish.
