Instructions: 1 Can (15 1/4 ounce) Pineapple chunks or tidbits in its own juice
1/4 cup vinegar 2 tablespoons soy sauce 1 tablespoon sugar 1 teaspoon ground ginger 2 tablespoons cornstarch 2 tablespoons water 1 ripe tomato cut into wedges 2 green onions sliced Instructions: In large skillet, brown chicken pieces in oil. Drain excess fat. Drain pineapple reserving juice. Combine reserved juice, vinegar, soy sauce, sugar and ginger. Pour over chicken. Cover and simmer 35 minutes or until chicken is done. Dissolve cornstarch in water. Add to skillet, cook, stirring constantly, until thickened. Add tomatoes and pineapple; heat through. Garnish with green onion. Serve with steamed rice, if desired.
