Instructions: Heat olive oil in a large saucepan over medium heat. Add diced onion, thyme and pepper, and saute for 2 minutes. Add rice, and cook for 1 minute. Stir in the pineapple and remaining ingredients, and bring to a boil. Cover, reduce heat, and simmer 20 minutes or until rice is done and liquid is absorbed.
