Instructions: Combine the butter and sugar until creamy. Stir in the pineapple and lemon extract. Combine the flour, baking soda and salt. Stir the dry ingredients into the wet. Drop by the teaspoonful onto an ungreased cookie sheet and bake in a preheated 350 oven for 12-15 minutes. They should be lightly browned. Let stand a few minutes and then remove to cool on a rack.
