3 cup pineapple chunks in juice drained
1 med cucumber seeded and diced
8 oz mung bean sprouts
1 x jalapeno seeded and minced
2 tbl lime juice
1/2 tsp cayenne pepper
2 tbl pineapple juice
Instructions:
Instructions: Place pineapple, cucumber, and bean sprouts in a large bowl.

In a separate bowl whisk together remaining ingredients along with 1 tablespoon of chopped mint. Add to pineapple mixture and toss gently.

Top with remaining mint and serve immediately or refrigerate before serving.
