Instructions: Mix crust ingredients and pat in 11 x 13 pan. Bake 15 to 20 minutes or until golden brown in 375 degrees oven. Cool. Filling: Beat eggs slightly; add water, sugar and pineapple. Boil until thick. Place over cooled crust. Top with one pint of whipped cream if desired.
NOTES : This is another favorite from my Gourmet Cooking Class. I made this frequently. (Yes, I can make desserts without chocolate.) I remember making this once while talking on the phone. Instead of adding cornstarch, I added baking powder and could not imagine why I needed a larger and larger pot. Email this Recipe:
