Instructions: Pare the zest from the lime in long strips.
Blanch in boiling water for one minute. Drain well then dry and chop. Squeeze the lime juice. Peel and core the pineapple and dice finely. Mix with the lime juice and zest. Peel and dice the avacado finely and add to the pineapple along with the remaining ingredients. Turn quickly amd carefully to mix without battering the avacado to a pulp. Cover and leave for at least half an hour for the flavours to blend. Taste and adjust the seasonings adding a little more lovage if you think the salsa could take it. Serves 6 Email this Recipe:
