Instructions: Combine the beef, bread crumbs and first amount of barbecue sauce.
Add the eggs, salt and pepper. Mix well. Firmly pack the beef mixture into a greased 9x5x3" loaf pan. Bake in a 350 oven for 1 hour. Drain. Invert the meatloaf onto an ovenproof platter. Cut the meatloaf into 10 slices, keeping the slices upright. Alternate the meatloaf slices with the pineapple slices. Combine the pineapple juice with the cornstarch. Bring to a boil, stirring until thickened and clear. Add the second amount of barbecue sauce and heat. Baste the meatloaf and pineapple slices with the pineapple sauce. Garnish the top with cherries using toothpicks. Return the meatloaf to the oven for 15 min. Serve with the remaining sauce. Serves 10. Email this Recipe:
