1 can	crushed pineapple, (8 oz.)
1/4 cup	sugar
1 pkt	strawberry Jell-O, (3 oz.)
1/2 cup	hot water
1 x	carrot, grated
3 tbl	cottage cheese
1/2 cup	pecans, chopped

Instructions:

Instructions: Heat pineapple and sugar to boil. Dissolve Jell-O in water. Mix and cool.

Add rest of ingredients except Cool Whip. Congeal slightly; then add Cool Whip. Place in a mold; let set until firm.
