1 cup diced fresh pineapple
1 sm jalapeno chile pepper, seeded and minced
1 x clove garlic, minced
2 tbl minced onion
1 tbl chopped fresh cilantro
2 tsp grated lime zest
Instructions:
Instructions: MAKES 1 1/2 CUPS VEGAN

Fresh or canned pineapple can be used for this recipe. If using canned, be sure to select pineapple packed in juice or water and drain well.

In medium nonreactive bowl, mix all ingredients. Cover and refrigerate until ready to use. Salsa will keep refrigerated up to 3 days.
