400 gm Sugar, (14oz)
2 x Bananas
5 x Stem ginger balls
4 tbl Dark rum
200 ml Water, (6.6fl oz)
Instructions:
Instructions: Caramelise the sugar with some water and add the water to form a syrup.

Puree the bananas and ginger with the syrup, and add the rum. In a large roasting tin bake the pineapple slices for about 40 minutes in a hot oven and lift them out onto a rack to drain. Serve hot or cold with an ice cream and some the of the sauce.
