Instructions: Combine pineapple and brown sugar in bowl; stir well, and set aside.
Combine yogurt and cream cheese in a bowl; beat at medium speed of a mixer until smooth. Set aside. Place 1/4 cup cake cubes in each of 2 parfait glasses; top each with 2 tablespoons yogurt mixture and 1/4 cup pineapple mixture. Repeat layers; top with remaining yogurt mixture. Chill, if desired. Garnish each with 1/2 teaspoon coconut and a pineapple leaf, if desired. Email this Recipe:
